I know I really have no business making soup in the middle of August, but I told you all before–if I get a craving I have to squash it!! So here I am giving you a recipe for a hearty, delicious, crock pot soup in the middle of summer. Which by the way, the past few weeks have not felt like summer.at all. More like fall. I needed a jacket on a bike ride with my boy last night!! So maybe I’m not so crazy, ehh?? Anyway, make the soup now or next month or next year. It’s super easy and you will thank me. Eventually! Here’s what you’ll need:
10.75 oz. can broccoli cheese soup
10.75 oz. can cheddar cheese soup
1 cup milk
1 cup low sodium chicken broth
1 head of broccoli
1 tsp. extra virgin olive oil
1/2 medium onion, diced
1/2 green bell pepper, diced
1 tsp. garlic
1 carrot, shredded or diced
2-3 oz. of velveeta
rice, chicken, shredded cheddar cheese, croutons, black pepper
- Turn crock pot to low.
- Mix all ingredients in crock pot and give it a stir.
- Cook for 4-5 hours until thick and creamy.
Now how easy is that? I cooked up a bag of instant rice, warmed up some leftover chicken(from this recipe, Chicken Caesar Sandwich | Piece of Pie and a Dash of DIY.)and BAM! It was delicious! My kiddos had it topped with a few croutons and shredded cheese! It was a hit in our household! Hope you guys likey! 😀
