I had chicken tortilla soup at McAlister’s Deli. It was delicious!! So delicious, I had to recreate it! I hopped on Google and Pinterest and found tons of copycat recipes, YEAH! However, although this soup was yummy, it was not what I had at the deli. I still enjoyed two bowls of it and then had it for lunch the following day and will probably have it for lunch today. 🙂 It really is yummy, but sometimes I just need to have the exact thing to kick the craving?! Is that weird? OK, maybe I am weird BUT you should still try this “copycat” version of McAlister’s Chicken Tortilla Soup. (Good news is after searching yet again, I think I may have found a recipe that is much closer to the real deal. I will attach both links at the bottom of this post). Here’s what you’ll need:
3 garlic cloves, minced
1 medium onion, diced
2 tbsp all-purpose flour
3 tbsp butter
3, 14 oz cans of chicken broth
4 cups half and half
1 10 1/2 oz can of cream of chicken soup
1 10 oz can of diced tomatoes with green chiles
1 15 oz can creamed corn
4 chicken breasts, boiled and shredded
2 tsps cumin
1 packet fajita seasoning
1 tbsp dried cilantro
tortilla chips, green onions, cheese
- Saute garlic and onion in butter until onions are translucent.
- Sprinkle flour over onion and garlic and cook for a minute.
- Add broth and half and half, bring to a boil and reduce heat.
- Add soup, tomatoes, corn, chicken, spice and seasonings.
- Simmer on low for 20-25 minutes.
This soup is very rich. Delicious. A little spicy. Hearty. Yummy.
If you don’t have half and half, I think milk would work just the same. If you’d like to increase the amount of broth and use less half and half that would be fine also. We topped ours with lettuce, onion, jalapenos, tortillas and monterey jack cheese. Black olives, salsa, a squeeze of lime and cheddar cheese would be yummy as well. I hope you enjoy!
