I‘ve got another crock pot recipe for you all! It’s a good one!! The great thing about this meal is that you change/substitute any way you’d like. Make it spicier, thicker, meatier, etc. You get the picture! My version is not overly spicy, but my kids’ still won’t eat–they are picky eaters…a.k.a. brats!! 😉 This is my take. Here’s what you’ll need:
2 tbsp butter
1 tbsp minced garlic
1/2 medium onion, diced
1/2 bell pepper, diced
1/4 tsp red pepper flake
1/2 tsp garlic powder
1/2 tsp salt
10 oz. can diced tomatoes with chiles, drained
14.5 oz can fire roasted tomatoes, with juice
3 oz tomato paste
1/2 cup chicken stock
1/2 tsp hot sauce
14 oz beef smoked sausage
8 oz raw shrimp
2 bags brown minute rice
1. Add butter, garlic, onion, bell pepper, spices, tomatoes, paste, stock and hot sauce in crock pot and simmer on low for 4-6 hours.
2. Mix in sausage and shrimp and cook until shrimp is done, about 8-10 minutes.
3. Boil water and cook rice according to package directions.
4. Turn off crock pot, add rice, combine and eat!!
Some variations to try: substitute andouille sausage for the smoked, add leftover chicken, serve with pasta, or swap the fire roasted tomatoes for another can of tomatoes with chiles and you have kicked it up a serious notch!! Hope you like! Enjoy!!
