I love baked chicken!!  Yes, yes I do. For me it’s a comfort food.  I had always been paranoid about cooking a WHOLE chicken though.  So worried about under or overcooking it.  Well I sucked it up and gave it a try.  Turns out it’s pretty simple and doesn’t take as long as you might think.  Prep time is only about 10 minutes and cook time is 15-20 minutes per pound.  So you can have dinner on the table in about an hour and a half.   If you don’t have time to cook this during the week, bake it on the weekend and reheat during the week.  It’s one of those meals that is even better reheated.  Here’s what you’ll need:

Baked Chicken

Whole Chicken 4-5lbs, without giblets and neck

2 tbsp butter, melted

1 tsp minced garlic

Lemon, halved–one half for juice, other cut into slices

1 tsp salt, 1 tsp black pepper, 1 tsp oregano, 1/2 tsp onion powder, 1/2 tsp paprika, 1/4 tsp white pepper

  1. Preheat oven to 350 degrees
  2. Gently rinse chicken
  3. Put chicken in pan breast side up
  4. Melt butter with minced garlic
  5. Add juice of one lemon half to melted butter,  stir and brush on to chicken
  6. Sprinkle with spice mixture and add place sliced lemon on top, add a few slices under the skin if you are really feeling brave 🙂
  7. Cover with foil and bake until juices run clear and meat thermometer reads 165 degrees, be sure to temp near a bone
